Christmas Pudding

Hi everyone, my sister has requested that I post a recipe for Christmas Pudding. Chris makes this on Thanksgiving and Christmas morning and we love it. So try it if you are interested:

Ingredients:
4 cups milk, divided
1/2 cup uncooked rice
1 cup raisins/or craisins/or a little of both
1/4 cup margarine or butter
4 eggs
1/2 cup brown sugar, packed
2 tablespoons vanilla extract
pinch of salt
1 cup granola or quick-cooking oatmeal(Chris uses 1/2 of each)
1/4 cup ground pecans or walnuts
1/2 teaspoon cinnamon and or nutmeg

In a large saucepan, bring 2 cups of the milk , the rice and raisins to a boil.
Reduce heat. Add marg. and stir until boiling stops, about 5 minutes. Remove from heat.
In a mixing bowl, blend eggs, remaining milk, brown sugar, vanilla and salt.
Add rice mixture to the egg mixture and stir
Pour into a 9 x 9 inch pan. Sprinkle granola on top.
Bake in a preheated oven at 325 degrees for 20 minutes.
Sprinkle pecans, cinnamon and nutmeg on top and bake for additional 20 minutes.
Remove from oven and serve immediately.

It is a bit of a process, but worth all the work. Actually I don't do any work, Chris does it all. I do the dishes though and put away all the stuff he leaves out, and of course I also enjoy the finished product. We work well together that way. I hope everyone is having a happy Christmas break.
